New Spin on an old Favorite: Broccoli

Broccoli is extremely easy to grow

Broccoli is extremely easy to grow

Before the frost hit last night, I picked the last of my broccoli florets. I was bummed.  I love broccoli and had been putting this off until I couldn’t wait any longer.  This morning, as I made my rounds I contemplated pulling the plants to make room for the next crop, but something told me not to.

The leaves were still big and green, just poking out towards the sun. So I did my homework.  Turns out broccoli leaves have their own unique nutrients not found on the stems and florets.

According to The World’s Healthiest Foods, broccoli leaves contain more beta-carotene than the stems/florets as well as phytonutrients not found in the vegetable portion of the plant.

Surfing the net, I found lots of recipes but they were all similar.  Stir fry the leaves with your other veggies or sautee lightly in Extra Virgin Olive Oil along with garlic.

Just think.  Now you can stretch your food budget even more and get twice the nutrients from 1 picking or 1 grocery store purchase. Another win-win!

Happy Day,
